Veggie Patty Salad Recipe

Do you ever get overwhelmed deciding what to make when going to a pot luck or possibly a friend stops by unexpected?
We'll I'm here to share with you one of my favorite recipes that's sure to satisfy everyone.
From bbq to a dinner party, this dish will, for sure, be loved. Plus it's super healthy and effortless to make.

Veggies Patty Recipe:
1 cup of broccoli rice
1 cup cauliflower rice
1 cup of grated sharp cheddar
1 egg
2 Tbs coconut or almond flour
Saute broccoli and cauliflower in butter for about 5 min and then set aside to cool
Add all ingredients to a bowl
Spoon onto parchment paper and form in to patties.
Cook at 400 for about 20 min then flip and cook for another 10 min or so
Serves 4 to 5 people
Fennel Salad Recipe:
2 bags of Arugula
1.5 lemons (squeezed)
3/4 cup of chopped Fennel
2 cups of halved cherry tomatoes
a few drizzles of olive oil (test and add as needed)
1 cup of Parmesan
1 tablespoons of ground pepper (test and add as need)
Few good shakes of sea salt (test and add as needed)

Feel free to serve patties and salad together or separately. Personally, I enjoy serving the patties on top of the salad, which really compliments each other. Though if you don't have much time the salad alone is a great one to take to parties.
